Wellbeing Recipe: Filipino Adobo

This dish in my home country is simple and can be adjusted to any dietary needs. Cooking food that reminds me of home improves my wellbeing and I hope others feel the same way.

My Favorite way to cook adobo is with pork, but adobo can be cooked with anything like egg, tofu, beef, chicken etc. You just need to know the marinade recipe. Below is a recipe for pork adobo that my family uses but just keep in mind that the source of the proteins can be altered to your liking.

Ingredients

  • 2 lbs pork belly (can be substituted to any type of sustenance)
  • 2 tablespoons garlic
  • 5 dried bay leaves
  • 4 tablespoons vinegar
  • 1/2 cup soy sauce
  • 1 tablespoon black peppercorn (whole or ground is fine)
  • 2 cups water
  • Salt to taste
  • Optional: Brown Sugar

Instructions

  • Combine the protein of choice (Example: Pork belly), soy sauce, and garlic then marinade for at least 1 hour
    • You can skip this step if you don’t have time but the longer it marinades the more flavor your sustenance will be
  • Heat the pot and put-in the marinated pork belly then cook for a few minutes
  • Pour remaining marinade including garlic.
  • Add water, peppercorn, and dried bay leaves then bring to a boil. Simmer for 40 minutes to 1 hour
    • The longer the simmer the softer the meat will be
  • Put-in the vinegar and simmer for 12 to 15 minutes
  • Add salt to taste
  • Add Brown sugar to reduce acidity, just a few pinches should do
  • Serve Hot. Eat with Rice. Share and enjoy!
